Ingredients

  • 1 medium onion (any variety will enhance flavor)
  • 2 cups leftover vegetables (use hardy greens or any roasted veggies)
  • 2 cups shredded turkey breast (can substitute with shredded chicken or plant-based protein)
  • 8 pieces corn tortillas (swap for flour tortillas if preferred)
  • 1 cup shredded cheese (try Mexican blend, Monterey Jack, or mozzarella)

Instructions

  1. Preheat Oven: Position the oven rack about 6 inches from the broiler and preheat your oven to high.
  2. Make Sauce: In your blender, combine pumpkin puree, chicken broth, chopped tomatoes, chipotle chilis, chili powder, minced garlic, kosher salt, and black pepper. Blend until smooth.
  3. Cook Onion: Heat olive oil in a large oven-safe skillet over medium heat, add sliced onion, and sauté for 3-5 minutes until translucent.
  4. Add Vegetables: Stir in leftover vegetables and heat for another 2-3 minutes.
  5. Combine Ingredients: Fold in shredded turkey and corn tortillas, pour creamy pumpkin sauce over and stir to coat.
  6. Simmer: Reduce heat and let mixture simmer for approximately 5 minutes, stirring occasionally.
  7. Broil: Remove from heat, sprinkle shredded cheese on top, and broil for 1-2 minutes until melted and browned.
