Description

A savory Italian-inspired pasta dish featuring tender chicken breast, sun-dried tomatoes, creamy mozzarella cheese, and a rich garlic-infused sauce, perfect for a comforting dinner.


Ingredients

  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup heavy cream
  • 1 cup low-moisture mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 1 cup baby spinach leaves (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp fresh basil, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and sauté until fully cooked and golden brown, about 5-7 minutes. Transfer the cooked chicken to a plate.
  3. In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Reduce the heat to medium-low. Pour in the heavy cream and bring to a gentle simmer. Stir in the mozzarella and Parmesan cheese until the sauce is creamy and smooth.
  5. Add the cooked pasta, chicken, and spinach (if using) to the skillet. Toss everything together until well combined and the spinach is wilted.
  6. Serve hot, garnished with fresh basil.
