Description

This One Pot Lasagna Soup recipe offers all the comforting flavors of traditional lasagna without the fuss of layering and baking. It’s a hearty, cheesy, and satisfying soup that’s perfect for a weeknight meal.


Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 (6 oz) can tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef broth
  • 2 cups water
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley or basil, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef (and sausage, if using) and cook until browned, about 6–8 minutes. Drain excess fat.
  2. Add diced onion and minced garlic to the pot. Cook until fragrant, about 2 minutes. Stir in dried oregano, dried basil, and crushed red pepper flakes.
  3. Stir in tomato paste and cook for 1 minute. Add crushed tomatoes, beef broth, and water. Stir well and bring to a boil.
  4. Reduce heat to medium and simmer the soup for 10 minutes to allow flavors to meld.
  5. Stir in the broken lasagna noodles. Cook uncovered for 10–12 minutes, stirring occasionally, until the noodles are tender.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Ladle the one pot lasagna soup into bowls. Top each serving with a dollop of ricotta cheese, a sprinkle of shredded mozzarella, and grated Parmesan cheese. Garnish with fresh parsley or basil before serving.

Notes

  • For a richer soup, stir in 1/2 cup of heavy cream before serving.
  • Leftovers can be refrigerated in an airtight container for up to 4 days.
  • Reheat leftovers on the stove or in the microwave, adding a splash of broth or water to loosen the consistency.
