This One Pot Lasagna Soup recipe offers all the comforting flavors of traditional lasagna without the fuss of layering and baking. It’s a hearty, cheesy, and satisfying soup that’s perfect for a weeknight meal.

- 1 lb ground beef or Italian sausage
- 1 tbsp olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp crushed red pepper flakes (optional)
- 1 (6 oz) can tomato paste
- 1 (28 oz) can crushed tomatoes
- 4 cups beef broth
- 2 cups water
- 8 lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley or basil, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef (and sausage, if using) and cook until browned, about 6–8 minutes. Drain excess fat.
- Add diced onion and minced garlic to the pot. Cook until fragrant, about 2 minutes. Stir in dried oregano, dried basil, and crushed red pepper flakes.
- Stir in tomato paste and cook for 1 minute. Add crushed tomatoes, beef broth, and water. Stir well and bring to a boil.
- Reduce heat to medium and simmer the soup for 10 minutes to allow flavors to meld.
- Stir in the broken lasagna noodles. Cook uncovered for 10–12 minutes, stirring occasionally, until the noodles are tender.
- Taste and adjust seasoning with salt and pepper as needed.
- Ladle the one pot lasagna soup into bowls. Top each serving with a dollop of ricotta cheese, a sprinkle of shredded mozzarella, and grated Parmesan cheese. Garnish with fresh parsley or basil before serving.
Notes
- For a richer soup, stir in 1/2 cup of heavy cream before serving.
- Leftovers can be refrigerated in an airtight container for up to 4 days.
- Reheat leftovers on the stove or in the microwave, adding a splash of broth or water to loosen the consistency.
