Description

Easy Maple Roasted Carrots are a sweet and savory side dish that balances simplicity and flavor, perfect for weeknight meals or gatherings. These tender, caramelized carrots with a sticky maple glaze are naturally vegan and gluten-free.

Ingredients

Scale
  • 4 large Carrots
  • 2 tablespoons Olive Oil
  • 2 tablespoons Maple Syrup
  • 1 teaspoon Sea Salt
  • 1/4 teaspoon Cayenne Pepper
  • 2 sprigs Fresh Rosemary
  • 2 tablespoons Chopped Parsley

Instructions

  1. Preheat the oven to 400°F (205°C).
  2. Slice the carrots in half lengthways and arrange them in a single layer on a large baking sheet.
  3. Mix olive oil and maple syrup in a small bowl.
  4. Brush this sweet mixture generously over the carrots.
  5. Sprinkle with sea salt and cayenne pepper (if using), and tuck fresh rosemary sprigs between the carrot halves.
  6. Bake for 25 minutes, flipping the carrots halfway through.
  7. Serve the carrots on a large plate, garnished with chopped parsley if desired.

Notes

  • For optimal enjoyment, serve straight from the oven—these carrots shine when freshly made!
  • Large carrots are recommended for the best texture and sweetness.
  • Dark maple syrup is best for enhanced flavor.
  • Cayenne pepper can be omitted or substituted with red pepper flakes for a milder option.
  • Rosemary can be swapped with thyme or oregano.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in the oven at 350°F (175°C) for about 10 minutes.
