Instructions
- Preheat your oven to 375°F (190°C). Grease and flour a 15×10 inch baking pan. Line with parchment paper and grease the parchment paper.
- In a large bowl, beat Libby’s pumpkin puree, granulated sugar, and eggs until well combined.
- In a separate small bowl, whisk together cinnamon, ginger, cloves, salt, and baking soda.
- Add the dry spice mixture and flour to the pumpkin mixture. Mix until just combined.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 13-15 minutes, or until a toothpick inserted into the center comes out clean. This is your Libby’s pumpkin roll cake base.
- While the cake is baking, sprinkle a clean kitchen towel generously with powdered sugar.
- As soon as the cake comes out of the oven, invert it onto the prepared towel. Remove the parchment paper.

- Carefully re-roll the cake, this time without the towel.
