Description

Ingredients

  • 1 cup Libby’s 100% Pure Pumpkin
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup all-purpose flour
  • Powdered sugar for dusting
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour a 15×10 inch baking pan. Line with parchment paper and grease the parchment paper.
  2. In a large bowl, beat Libby’s pumpkin puree, granulated sugar, and eggs until well combined.
  3. In a separate small bowl, whisk together cinnamon, ginger, cloves, salt, and baking soda.
  4. Add the dry spice mixture and flour to the pumpkin mixture. Mix until just combined.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 13-15 minutes, or until a toothpick inserted into the center comes out clean. This is your Libby’s pumpkin roll cake base.
  7. While the cake is baking, sprinkle a clean kitchen towel generously with powdered sugar.
  8. As soon as the cake comes out of the oven, invert it onto the prepared towel. Remove the parchment paper.

  10. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. This is your Libby’s pumpkin cream cheese roll filling.
  11. Once the cake is completely cool, gently unroll it.
  12. Spread the cream cheese filling evenly over the cake.
  13. Carefully re-roll the cake, this time without the towel.
  14. Wrap the finished Libby’s pumpkin roll tightly and refrigerate for at least 1 hour before serving.
