- 1/4 tsp crushed red pepper flakes (optional)
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1 cup (113 g) low-moisture mozzarella, shredded
- 3/4 cup (60 g) finely grated Parmesan cheese, divided
- 2 tbsp chopped fresh parsley
- 1 egg beaten with 1 tbsp water (optional)
- 1 tbsp all-purpose flour
- 1 cup (240 ml) warm marinara sauce, for dipping
Instructions
- Preheat oven to 400°F (205°C). Line a rimmed baking sheet with parchment paper.
- In a small bowl, mix melted butter, olive oil, minced garlic, garlic powder, Italian seasoning, red pepper flakes, salt, and pepper. Reserve 1 tablespoon for finishing.
- Lightly flour your counter. Roll the pizza dough into a 12×14-inch rectangle, about 1/4 inch thick.
- Brush the dough with the garlic butter mixture, leaving a 1/2-inch border on one long side. Sprinkle with mozzarella, 1/2 cup Parmesan, and parsley.
- Starting from the long edge opposite the border, roll into a tight log. Pinch the seam to seal and place seam-side down.
- Slice into 12 equal pieces using a sharp serrated knife or unflavored dental floss.
- Place slices cut-side up on the prepared baking sheet, spacing them 1.5 inches apart. Brush tops lightly with egg wash or garlic butter.
- Bake for 14–16 minutes until puffed and golden brown, with bubbling cheese.
- Immediately brush hot rolls with the reserved garlic butter, sprinkle with the remaining 1/4 cup Parmesan, and more parsley.
- Rest for 5 minutes before serving warm with marinara sauce.
