Description

Enjoy these Garlic Parmesan Pizza Rolls, featuring buttery garlic, nutty Parmesan, and gooey mozzarella wrapped in golden, pull-apart bites. They are perfect for game day, casual dinners, or as a fun appetizer.

Ingredients

Scale
  • 1 lb (450 g) refrigerated pizza dough
  • 3 tbsp (42 g) unsalted butter, melted
  • 1 tbsp extra-virgin olive oil
  • 4 cloves garlic, finely minced
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1 cup (113 g) low-moisture mozzarella, shredded
  • 3/4 cup (60 g) finely grated Parmesan cheese, divided
  • 2 tbsp chopped fresh parsley
  • 1 egg beaten with 1 tbsp water (optional)
  • 1 tbsp all-purpose flour
  • 1 cup (240 ml) warm marinara sauce, for dipping

Instructions

  1. Preheat oven to 400°F (205°C). Line a rimmed baking sheet with parchment paper.
  2. In a small bowl, mix melted butter, olive oil, minced garlic, garlic powder, Italian seasoning, red pepper flakes, salt, and pepper. Reserve 1 tablespoon for finishing.
  3. Lightly flour your counter. Roll the pizza dough into a 12×14-inch rectangle, about 1/4 inch thick.
  4. Brush the dough with the garlic butter mixture, leaving a 1/2-inch border on one long side. Sprinkle with mozzarella, 1/2 cup Parmesan, and parsley.
  5. Starting from the long edge opposite the border, roll into a tight log. Pinch the seam to seal and place seam-side down.
  6. Slice into 12 equal pieces using a sharp serrated knife or unflavored dental floss.
  7. Place slices cut-side up on the prepared baking sheet, spacing them 1.5 inches apart. Brush tops lightly with egg wash or garlic butter.
  8. Bake for 14–16 minutes until puffed and golden brown, with bubbling cheese.
  9. Immediately brush hot rolls with the reserved garlic butter, sprinkle with the remaining 1/4 cup Parmesan, and more parsley.
  10. Rest for 5 minutes before serving warm with marinara sauce.

Notes

  • Let refrigerated dough sit at room temperature for 20–30 minutes before shaping for easier rolling.
  • For clean spirals, slice with unflavored dental floss.
  • Avoid overfilling with cheese to prevent blowouts and soggy centers.
  • For extra crispiness, bake on a preheated baking steel or upside-down baking sheet.
  • Assemble ahead by refrigerating the log for up to 24 hours or freezing unbaked for up to 2 months.
