Description

Enjoy the delightful Easter Rocky Road with Mini Eggs, a no-bake treat that combines rich chocolate, crunchy cookies, and chewy marshmallows.

Ingredients

Scale
  • 200 g Milk Chocolate (Quality bars or chips are recommended.)
  • 2 tbsp Avocado Oil (Can substitute with olive or coconut oil.)
  • 100 g Caramello Milk Chocolate Squares (Substitute with any soft caramel candy if desired.)
  • 100 g Mini Marshmallows (Chopped larger marshmallows can be used.)
  • 150 g Vanilla Creme Sandwich Cookies (Gluten-free options can be used.)
  • 100 g Cadbury Mini Eggs (Can substitute with other chocolate-coated eggs.)

Instructions

  1. Start by chopping all your candies and cookies into manageable pieces, about the size of a marble. Set aside.
  2. In a large mixing bowl, combine the chopped milk chocolate and avocado oil. Microwave in 30-second intervals, stirring frequently, until melted and smooth, about 1-2 minutes.
  3. Gently fold in the chopped caramello squares, vanilla crème sandwich cookies, Cadbury mini eggs, and mini marshmallows into the melted chocolate until well-coated.
  4. Lightly grease a loaf pan with oil or line it with parchment paper. Transfer the chocolate mixture evenly into the pan, pressing down gently and topping with extra mini eggs.
  5. Place the pan in the freezer for 1 hour to firm up, then transfer to the refrigerator until ready to slice and serve.
