Description

Savory Chicken Shawarma with Irresistible Garlic Sauce

Ingredients

Scale
  • 1 cup Greek Yogurt (or coconut yogurt for dairy-free option)
  • 2 tablespoons Olive Oil (use high-quality)
  • 2 tablespoons Lemon Juice (freshly squeezed)
  • 4 cloves Minced Garlic (remove green sprouts)
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Cardamom
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Turmeric
  • 1 teaspoon Cinnamon
  • 1 teaspoon Cayenne Pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1.5 pounds Chicken Thighs (cut into strips or whole)
  • 2 tablespoons Ice Water (for garlic sauce)
  • 4 cloves Garlic (adjust to taste)
  • 1 teaspoon Salt

Instructions

  1. In a bowl, whisk together Greek yogurt, olive oil, and lemon juice until smooth. Add the spices and give it a good mix. Pat your chicken thighs dry, toss them in the marinade, and let them soak up the flavor for at least 3 hours, or better yet, overnight!
  2. Start by processing the minced garlic and a pinch of salt in a food processor. Gradually drizzle in the olive oil, then add lemon juice, alternating until your sauce is beautifully emulsified. Finish with a splash of ice water to get that perfect creamy texture.
  3. Heat a skillet over high heat. Place the marinated chicken in the hot skillet and cook for 3-4 minutes on each side, until they’re delightfully charred and reach an internal temperature of 165°F. After cooking, let it rest so the juices can redistribute.
  4. Warm your pita bread gently on a skillet or in the oven. Spread a generous layer of the creamy garlic sauce, add in the succulent chicken, and top it with fresh veggies like lettuce, tomatoes, or pickled onions. Drizzle with more sauce for that extra zing!
