- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 tbsp olive oil
- 1 tbsp butter
- 8 oz cremini mushrooms, sliced
- 4 cloves garlic, minced
- 1 cup chicken broth
- 0.5 cup heavy cream
- 2 tbsp chopped fresh parsley
- Salt, to taste
- Black pepper, to taste
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add butter to the same skillet. Add sliced mushrooms and cook until softened and browned, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
- Stir in heavy cream and chopped parsley. Season with salt and pepper to taste.
- Return chicken to the skillet and spoon the garlic mushroom sauce over it.
- Serve immediately.

- For chicken thighs, adjust cooking time as needed for thorough cooking.
- Feel free to add other herbs like thyme or rosemary.
- A splash of white wine can be added with the chicken broth for extra flavor.
