Description

A quick and easy recipe for juicy pan-seared chicken smothered in a creamy garlic mushroom sauce. Perfect for busy weeknights or special occasions, this dish is ready in under 30 minutes and packed with flavor.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 2 tbsp chopped fresh parsley
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  2. Add butter to the same skillet. Add sliced mushrooms and cook until softened and browned, about 5 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
  5. Stir in heavy cream and chopped parsley. Season with salt and pepper to taste.
  6. Return chicken to the skillet and spoon the garlic mushroom sauce over it.
  7. Serve immediately.

Notes

  • For chicken thighs, adjust cooking time as needed for thorough cooking.
  • Feel free to add other herbs like thyme or rosemary.
  • A splash of white wine can be added with the chicken broth for extra flavor.
