Ingredients

  • 1 cup Rice Flour
  • 1/2 cup Besan (Chickpea Flour)
  • 3 tbsp Softened Butter
  • 1 tsp Cumin Seeds
  • 1/4 tsp Hing (Asafoetida)
  • 1 tsp Salt
  • 1/2 cup Water

Instructions

  1. In a bowl, combine rice flour, besan, cumin seeds, hing, salt, and softened butter. Mix with your hands until crumbly.
  2. Gradually add water until it transforms into a tight, smooth dough for your butter murukku besan rice.
  3. Load your dough into a murukku press fitted with a star-shaped stencil.
  4. In a kadai, heat enough oil for deep frying until a small piece of dough sizzles immediately.
  5. Squeeze and cut the dough into short strips above the hot oil.
  6. Fry the butter murukku besan rice in batches until golden brown and the sizzling sound lessens.
  7. Using a slotted spoon, remove the murukkus and drain excess oil on paper towels.
