Ingredients

  • 1 cup (250g) full-fat, small-curd cottage cheese
  • 2 large eggs
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • Zest of 1 large lemon (about 12 teaspoons)
  • 1 cup (120g) all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • 1 cup (150g) fresh or frozen blueberries (do not thaw if using frozen)
  • 23 tablespoons vegetable oil or unsalted butter, for frying
  • Optional for Serving: Powdered sugar
  • Optional for Serving: Maple syrup or honey
  • Optional for Serving: Extra lemon zest
  • Optional for Serving: A dollop of Greek yogurt or sour cream

Instructions

  1. In a large mixing bowl, whisk 2 large eggs until light and frothy. Add 1 cup full-fat, small-curd cottage cheese, ¼ cup granulated sugar, 1 teaspoon pure vanilla extract, and the zest of 1 large lemon. Stir all wet ingredients together with a spatula or wooden spoon until well combined.
  2. In a separate, smaller bowl, measure out 1 cup all-purpose flour. Add 1 teaspoon baking powder and ¼ teaspoon fine sea salt. Whisk these dry ingredients together thoroughly with a fork for about 30 seconds.
  3. Pour the dry ingredients directly into the bowl with your wet ingredients. Using your spatula or wooden spoon, gently fold the dry into the wet until the flour streaks have just disappeared.
  4. Carefully fold in 1 cup of fresh or frozen blueberries until they are evenly distributed throughout the batter. Let the batter rest for 5-10 minutes for a fluffier result.
  5. Place a large non-stick skillet or cast-iron pan over medium-low heat. Add 1-2 tablespoons of vegetable oil or unsalted butter to the pan.
  6. Using a tablespoon or small cookie scoop, drop spoonfuls of the batter into the hot pan. Do not overcrowd; leave enough space between each bite.
  7. Cook the cottage cheese bites for about 3-4 minutes on the first side until small bubbles form on the surface and the underside is golden brown.
  8. Carefully flip each bite over using a thin spatula. Cook for another 3-4 minutes on the second side, or until they are also golden brown and feel firm to the touch.
  9. As each batch finishes cooking, transfer them to a wire rack or serving plate. Keep them warm in an oven preheated to its lowest setting if making a large batch.
  10. Serve the bites warm, optionally dusted with powdered sugar, drizzled with maple syrup or honey, or accompanied by a dollop of Greek yogurt or sour cream.
