Description

Ingredients

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 teaspoons dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 2 cups spinach (or kale), chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the ground turkey and cook, breaking it apart with a spoon, until browned.
  3. Add the chopped onion and garlic, cooking for another 2-3 minutes until softened.
  4. Stir in the diced carrots, celery, zucchini, and diced tomatoes (with juice).
  5. Pour in the chicken broth and add thyme, basil, oregano, salt, pepper, and bay leaf.
  6. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-30 minutes until the vegetables are tender and the flavors meld together.
  7. Remove the bay leaf, and stir in the spinach (or kale).
  8. Cook for an additional 3-5 minutes until the greens are wilted.
  9. Taste and adjust seasoning if needed.
  10. Serve hot.
