Ingredients

  • 1 lb ground turkey
  • 1 can pumpkin puree (15 oz)
  • 1 can diced tomatoes (14.5 oz)
  • 1 can kidney beans (15 oz, drained and rinsed)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups vegetable broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a Dutch oven, heat a bit of oil over medium heat.
  2. Add onion and bell pepper, sauté until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add ground turkey, cooking until browned.
  5. Mix in pumpkin puree, diced tomatoes, and vegetable broth.
  6. Add kidney beans, chili powder, cumin, salt, and pepper.
  7. Bring to a simmer, reduce heat, and cook for 20 minutes.
  8. Serve hot, garnished with your choice of toppings.
