- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans (15 oz, drained and rinsed)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups vegetable broth
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- In a Dutch oven, heat a bit of oil over medium heat.
- Add onion and bell pepper, sauté until softened.
- Stir in garlic and cook for 1 minute.
- Add ground turkey, cooking until browned.
- Mix in pumpkin puree, diced tomatoes, and vegetable broth.
- Add kidney beans, chili powder, cumin, salt, and pepper.
- Bring to a simmer, reduce heat, and cook for 20 minutes.
