  • 1 medium Yellow Onion, Chopped
  • 2 cloves Garlic Cloves, Minced
  • 1 medium Red Bell Pepper, Chopped
  • 1 pound Extra Lean Ground Turkey (99%)
  • 2 cans Dark Red Kidney Beans, rinsed and drained
  • 1 can Sweet Corn, 15-ounce can, rinsed and drained
  • 2 tablespoons Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • 1/4 teaspoon Cayenne Pepper
  • 28 ounces Diced or Crushed Tomatoes
  • 2 cups Chicken Broth

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and red bell pepper; sauté for 5-7 minutes until softened and fragrant.
  2. Add the extra lean ground turkey to the pot. Break it apart with a spoon and cook until no longer pink, about 5-6 minutes.
  3. Stir in the chili powder, ground cumin, dried oregano, and cayenne pepper. Cook for about 20 seconds to release the aromas, stirring continuously.
  4. Pour in the diced or crushed tomatoes, chicken broth, kidney beans, and corn. Stir well and bring the mixture to a boil.
  5. Reduce the heat and let the chili simmer uncovered for 30-45 minutes. Adjust seasoning as needed.
  6. Serve topped with shredded cheese, avocado slices, or a dollop of Greek yogurt for extra flavor.
