Ingredients

  • 1 cup Coconut Cream (Can substitute with coconut milk.)
  • 2 tablespoons Fish Sauce (Substitute with soy sauce for a vegetarian option.)
  • 2 tablespoons Sugar (Consider using brown sugar or coconut sugar.)
  • 2 tablespoons Lime Juice (Fresh lime is preferred.)
  • 1/4 cup Cilantro (Optional.)
  • 1/2 cup Queso Fresco (Feta cheese can be a substitute.)

Instructions

  1. In a saucepan, combine coconut cream, fish sauce, sugar, and lime juice. Stir vigorously over medium heat until thickened, about 10 minutes; then set aside to cool.
  2. Heat your grill to medium-high. Grill raw corn for approximately 15 minutes, turning until tender and charred. For pre-cooked corn, grill for about 5 minutes, brushing generously with the sauce.
