Sweet Potato Rounds with Brie: A Festive Flavor Delight

- 2 medium Sweet Potatoes (butternut squash can be a substitute)
- 2 tablespoons Olive Oil (or other cooking oils)
- to taste Salt
- to taste Pepper
- 8 ounces Brie Cheese (or Camembert)
- 1 cup Dried Cranberries (or dried cherries/apricots)
- 1/2 cup Toasted Pecans (or walnuts/pistachios)
- to taste Fresh Rosemary or Thyme (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash, peel, and slice the sweet potatoes into ¼-inch rounds. Arrange them on the baking sheet.
- Drizzle the sweet potatoes with olive oil and season with salt and pepper. Toss to coat evenly and roast for 20–25 minutes, flipping halfway.
- Remove the baking sheet from the oven and place a slice of brie on each sweet potato round. Return to the oven for an additional 5 minutes.
- Top each round with dried cranberries and toasted pecans. Garnish with fresh herbs and serve warm.
