Description

Sweet Potato Rounds with Brie: A Festive Flavor Delight


Ingredients

  • 2 medium Sweet Potatoes (butternut squash can be a substitute)
  • 2 tablespoons Olive Oil (or other cooking oils)
  • to taste Salt
  • to taste Pepper
  • 8 ounces Brie Cheese (or Camembert)
  • 1 cup Dried Cranberries (or dried cherries/apricots)
  • 1/2 cup Toasted Pecans (or walnuts/pistachios)
  • to taste Fresh Rosemary or Thyme (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash, peel, and slice the sweet potatoes into ¼-inch rounds. Arrange them on the baking sheet.
  3. Drizzle the sweet potatoes with olive oil and season with salt and pepper. Toss to coat evenly and roast for 20–25 minutes, flipping halfway.
  4. Remove the baking sheet from the oven and place a slice of brie on each sweet potato round. Return to the oven for an additional 5 minutes.
  5. Top each round with dried cranberries and toasted pecans. Garnish with fresh herbs and serve warm.
