- 1 teaspoon Dijon Mustard
- 1/4 cup Red Onion, chopped
- 1 medium Ripe Avocado, diced
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice the sweet potatoes into rounds, about ¼ inch thick.
- Arrange the sweet potato rounds on the lined baking sheet. Drizzle with olive oil and season with sea salt and black pepper.
- Roast for 20 minutes, then flip the slices and roast for an additional 10-15 minutes until tender and slightly crisp.
- While the sweet potatoes roast, whisk together sesame oil, fresh lemon juice, Dijon mustard, and a pinch of salt in a mixing bowl.
- Gently fold in the chopped red onion into the tartare mixture.
- Once the sweet potatoes are ready, carefully fold the diced avocado into the tartare mixture.
- Top each sweet potato round with a spoonful of avocado tartare.
- Garnish with thin slices of watermelon radish and a sprinkle of sesame seeds.
