Ingredients

  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Sea Salt
  • 1 teaspoon Black Pepper
  • For the Topping:
  • 1 medium Watermelon Radish
  • 1 tablespoon Sesame Seeds
  • 1 tablespoon Toasted Sesame Oil
  • 2 tablespoons Fresh Lemon Juice
  • 1 teaspoon Dijon Mustard
  • 1/4 cup Red Onion, chopped
  • 1 medium Ripe Avocado, diced

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes into rounds, about ¼ inch thick.
  3. Arrange the sweet potato rounds on the lined baking sheet. Drizzle with olive oil and season with sea salt and black pepper.
  4. Roast for 20 minutes, then flip the slices and roast for an additional 10-15 minutes until tender and slightly crisp.
  5. While the sweet potatoes roast, whisk together sesame oil, fresh lemon juice, Dijon mustard, and a pinch of salt in a mixing bowl.
  6. Gently fold in the chopped red onion into the tartare mixture.
  7. Once the sweet potatoes are ready, carefully fold the diced avocado into the tartare mixture.
  8. Top each sweet potato round with a spoonful of avocado tartare.
  9. Garnish with thin slices of watermelon radish and a sprinkle of sesame seeds.
