Ingredients

  • 2 pieces Cooked Chicken (leftover or grilled chicken breast)
  • 2 pieces Tortillas (soft flour or whole wheat)
  • 1/2 cup Sweet Chili Sauce
  • 2 cups Lettuce or Greens (romaine or mixed greens)
  • 1 piece Cucumber (English cucumber recommended)
  • 1/2 cup Shredded Carrots
  • 1 piece Red Onion (thinly sliced)
  • 1 piece Avocado (sliced)
  • 1/2 cup Shredded Cheese (mozzarella or cheddar, optional)
  • 1 tablespoon Lime Juice
  • Salt and Pepper to taste

Instructions

  1. Prepare chicken: If not using leftover chicken, cook it by boiling, baking, or grilling until done. Shred into bite-sized pieces.
  2. Mix chicken: In a large bowl, combine shredded chicken with sweet chili sauce. Toss to coat evenly.
  3. Prepare vegetables: Wash and shred lettuce, thinly slice cucumber, shred carrots, and thinly slice red onion. Slice avocado just before assembly.
  4. Assemble wrap: Lay tortillas flat. Layer with greens, chicken mixture, carrots, cucumber, onion, and avocado. Sprinkle with cheese if using. Drizzle with lime juice and season with salt and pepper.
  5. Wrap tightly: Fold the sides of the tortilla inward, then roll from the bottom to the top. Slice in half for easier handling.
