- 2 pieces Tortillas (soft flour or whole wheat)
- 1/2 cup Sweet Chili Sauce
- 2 cups Lettuce or Greens (romaine or mixed greens)
- 1 piece Cucumber (English cucumber recommended)
- 1/2 cup Shredded Carrots
- 1 piece Red Onion (thinly sliced)
- 1 piece Avocado (sliced)
- 1/2 cup Shredded Cheese (mozzarella or cheddar, optional)
- 1 tablespoon Lime Juice
- Salt and Pepper to taste
Instructions
- Prepare chicken: If not using leftover chicken, cook it by boiling, baking, or grilling until done. Shred into bite-sized pieces.
- Mix chicken: In a large bowl, combine shredded chicken with sweet chili sauce. Toss to coat evenly.
- Prepare vegetables: Wash and shred lettuce, thinly slice cucumber, shred carrots, and thinly slice red onion. Slice avocado just before assembly.
- Assemble wrap: Lay tortillas flat. Layer with greens, chicken mixture, carrots, cucumber, onion, and avocado. Sprinkle with cheese if using. Drizzle with lime juice and season with salt and pepper.
- Wrap tightly: Fold the sides of the tortilla inward, then roll from the bottom to the top. Slice in half for easier handling.
