- 2 pounds Pork Spareribs (cut into 2-inch strips)
- 1 medium Yellow Onion (can substitute with shallots)
- 1 teaspoon Black Pepper (freshly ground)
- 3 tablespoons Fish Sauce (vegetarian substitute: soy sauce)
- 1 cup Granulated Sugar (no substitutes recommended)
- 1/4 cup Rice Vinegar (can use distilled white vinegar)
- 1/4 cup Chopped Scallions (for garnish)
Instructions
- Cut the pork ribs into 2-inch sections for even cooking. Marinate with chopped onion, black pepper, fish sauce, and sugar for at least 2 hours—overnight is even better for deep flavor.
- In a saucepan, combine rice vinegar, sugar, and water. Heat until the sugar dissolves, then cook undisturbed until it reaches a rich burgundy color.
- Take the marinated ribs out of the marinade and grill on high heat for 10-15 minutes, turning occasionally for even charring.
- Transfer the grilled ribs to the pot with caramel sauce, adding enough water to nearly cover them. Bring to a boil, then reduce the heat and simmer covered for 45 minutes.
- Taste and adjust seasoning as needed. Skim off excess fat from the sauce, then plate with a generous garnish of chopped scallions.
