- 2 cloves Garlic (Minced)
- 1 tablespoon Lime Juice (Fresh preferred)
- 1 teaspoon Cumin (Ground)
- 1 teaspoon Chili Powder (Adjust to heat preference)
- 2 tablespoons Olive Oil (For cooking)
- 2 cups Bell Peppers (Any combination of colors)
- 1 large Onion (Yellow or red)
- 0.5 cup Fresh Cilantro (For garnish)
- 2 wedge Lime Wedges (For serving)
Instructions
- In a bowl, combine lime juice, minced garlic, cumin, chili powder, and half of the olive oil. Add sliced flank steak, ensuring it’s well-coated, and let it marinate for 15-20 minutes for optimal flavor.
- While the steak marinates, slice the bell peppers and onions into strips.
- Heat the remaining olive oil in a large skillet over medium-high heat. Add the sliced peppers and onions, cooking for 5-6 minutes until slightly softened.
- Push the vegetables to one side of the skillet. Add the marinated steak strips to the empty side and cook for 3-4 minutes, stirring occasionally, until desired doneness.
- Toss the steak and vegetables together in the skillet, then remove from heat. Garnish with fresh cilantro and serve immediately with lime wedges.
