Delicious Star Cookies with Pistachio Cream for Festive Treats

- 1 cup Unsalted Butter
- 1 cup Granulated Sugar
- 1 large Egg
- 1 teaspoon Vanilla Extract
- 2 cups All-purpose Flour
- 1 teaspoon Baking Powder
- 1 cup Pistachio Cream
- 1 cup Powdered Sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter and granulated sugar in a stand mixer until light and fluffy, about 2-3 minutes.
- Mix in the egg and vanilla extract until thoroughly combined.
- Combine the all-purpose flour and baking powder gradually into the mixture until a smooth dough forms.
- Roll out the dough on a floured surface to about ⅛ inch thick.
- Cut star shapes using a star cookie cutter, and collect any scraps to reroll for more cookies.
- Create smaller star shapes in half of the cookies using a smaller cutter.
- Arrange the cookies on parchment-lined baking sheets and bake for 8 minutes.
- Cool the cookies on a wire rack and dust the smaller star cookies with powdered sugar.
- Spread the pistachio cream on the whole cookies and sandwich with the smaller star shapes.
