Delicious Spinach Feta Quiche – A Make-Ahead Delight!


Ingredients

  • 4 oz Fresh Spinach (Thawed if using frozen)
  • 1 medium Onion (Chopped)
  • 1 cup Cheddar Cheese (Shredded)
  • 4 oz Feta Cheese (Crumbled)
  • 4 large Eggs (Recommended for best results)
  • to taste Salt
  • to taste Pepper
  • 1 each Pie Crust (Pre-baked)
  • 2 tbsp Butter (Optional)

Instructions

  1. Thaw your frozen pie crust completely and use a fork to poke small holes in the bottom. Pre-bake at 350°F for about 10 minutes until it’s lightly golden to prevent sogginess.
  2. In a mixing bowl, whisk together the large eggs, salt, and pepper until fully combined.
  3. In a skillet, cook the chopped onions and fresh spinach over medium heat until the spinach wilts and most moisture evaporates.
  4. In the pre-baked pie crust, layer the sautéed spinach and onions, followed by cheddar and feta cheese.
  5. Gently pour the whisked egg mixture over the layered ingredients.
  6. Place your quiche in the oven, add small pats of butter if using, and bake at 350°F for 24-30 minutes until set.
  7. Allow the quiche to cool for about 5 minutes before slicing.
