- 4 oz Fresh Spinach (Thawed if using frozen)
- 1 medium Onion (Chopped)
- 1 cup Cheddar Cheese (Shredded)
- 4 oz Feta Cheese (Crumbled)
- 4 large Eggs (Recommended for best results)
- to taste Salt
- to taste Pepper
- 1 each Pie Crust (Pre-baked)
- 2 tbsp Butter (Optional)
Instructions
- Thaw your frozen pie crust completely and use a fork to poke small holes in the bottom. Pre-bake at 350°F for about 10 minutes until it’s lightly golden to prevent sogginess.
- In a mixing bowl, whisk together the large eggs, salt, and pepper until fully combined.
- In a skillet, cook the chopped onions and fresh spinach over medium heat until the spinach wilts and most moisture evaporates.
- In the pre-baked pie crust, layer the sautéed spinach and onions, followed by cheddar and feta cheese.
- Gently pour the whisked egg mixture over the layered ingredients.
- Place your quiche in the oven, add small pats of butter if using, and bake at 350°F for 24-30 minutes until set.
- Allow the quiche to cool for about 5 minutes before slicing.
