Enjoy this Spicy Tuscan Chicken Pasta, bursting with bold flavors and a hint of spice, perfect for any occasion.


Ingredients

  • 8 ounces oil-packed sun-dried tomatoes
  • 1 pound boneless skinless chicken breasts
  • 1 pound short cut pasta
  • 4 teaspoons Italian seasoning
  • 1 teaspoon paprika or smoked paprika
  • red pepper flakes
  • kosher salt
  • black pepper
  • 1 cup grated parmesan cheese
  • 2 tablespoons salted butter
  • 1 medium shallot
  • 2 cloves garlic
  • 23 tablespoons crushed Calabrian chili paste
  • 1 cup heavy cream
  • 2 cups fresh baby spinach

Instructions

  1. Drain 3 tablespoons of oil from the jar of sun-dried tomatoes into a pot or skillet. Chop the tomatoes and set aside.
  2. Set the pot over medium-high heat. Add cubed chicken, 3 teaspoons of Italian seasoning, paprika, red pepper flakes, salt, and pepper. Cook until chicken is golden brown, about 5 minutes. Add 1/4 cup of parmesan, cook for another minute, then remove chicken from the pot.
  3. In the same pot, add a drizzle of oil and 2 tablespoons of salted butter. Add chopped shallot, garlic, and Calabrian chili paste along with 1 teaspoon of Italian seasoning. Cook until fragrant, about 3 minutes. Pour in 3 1/2 cups of water, bring to a boil, and add pasta. Cook until al dente, about 8 minutes.
  4. Stir in heavy cream, fresh spinach, chopped tomatoes, and remaining 3/4 cup of parmesan. Mix everything with the chicken.
  5. Serve pasta warm, topped with extra parmesan and basil if desired.
