- 1–2 drops pink food coloring (optional for pink hue)
- 8 oz cream cheese (can use vegan cream cheese)
- 0.5 cup powdered sugar (no substitute recommended)
- 0.25 cup strawberry jam (raspberry or apricot jam can be used)
- 1 cup powdered sugar (mixed with milk for glaze)
- 2 tbsp milk (use almond or soy milk for dairy-free glaze)
- 2 tbsp sparkling sugar (optional for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
- In a large mixing bowl, beat the softened unsalted butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and pink food coloring if using.
- Gradually add the dry mixture to the creamed butter mixture, stirring gently until just combined.
- In another bowl, blend the cream cheese, powdered sugar, and a splash of vanilla extract until smooth. Set aside and keep the strawberry jam separate.
- Scoop tablespoons of the dough, flatten slightly, and place a spoonful of the cream cheese mixture and a dollop of strawberry jam in the center. Wrap the dough around the filling.
- Place the cookies on the prepared baking sheet and bake for 10-12 minutes. Let them cool before glazing.
- Drizzle the pink glaze over the cooled cookies and sprinkle with sparkling sugar.
