Decadent Soft Strawberry Cheesecake Cookies to Satisfy Cravings


Ingredients

  • 2 cups all-purpose flour (can substitute with gluten-free flour)
  • 1 tbsp baking powder (essential for texture)
  • 0.5 tsp salt (use sea salt for added richness)
  • 0.5 cup unsalted butter (can be replaced with margarine)
  • 1 cup granulated sugar (brown sugar can be used for deeper flavor)
  • 1 large egg (flaxseed meal mixed with water can be used as a vegan substitute)
  • 1 tsp vanilla extract (use almond extract for different flavor)
  • 12 drops pink food coloring (optional for pink hue)
  • 8 oz cream cheese (can use vegan cream cheese)
  • 0.5 cup powdered sugar (no substitute recommended)
  • 0.25 cup strawberry jam (raspberry or apricot jam can be used)
  • 1 cup powdered sugar (mixed with milk for glaze)
  • 2 tbsp milk (use almond or soy milk for dairy-free glaze)
  • 2 tbsp sparkling sugar (optional for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In a large mixing bowl, beat the softened unsalted butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and pink food coloring if using.
  4. Gradually add the dry mixture to the creamed butter mixture, stirring gently until just combined.
  5. In another bowl, blend the cream cheese, powdered sugar, and a splash of vanilla extract until smooth. Set aside and keep the strawberry jam separate.
  6. Scoop tablespoons of the dough, flatten slightly, and place a spoonful of the cream cheese mixture and a dollop of strawberry jam in the center. Wrap the dough around the filling.
  7. Place the cookies on the prepared baking sheet and bake for 10-12 minutes. Let them cool before glazing.
  8. Drizzle the pink glaze over the cooled cookies and sprinkle with sparkling sugar.
