- 2 tablespoons unsalted butter
- 1 large yellow onion, thinly sliced
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh thyme leaves
- Fresh parsley, chopped (for garnish)

- Pat the pork chops dry with paper towels. Season both sides with kosher salt, black pepper, and smoked paprika. Dredge the chops lightly in flour, tapping off excess. Reserve 2 tablespoons of the flour for the gravy.
- In a large skillet, heat olive oil over medium-high heat. Add pork chops and sear for 3-4 minutes per side until golden brown. Transfer the chops to a plate.
- Lower skillet heat to medium and add butter. Add sliced onions and cook for 5-7 minutes until very soft and caramelized. Add garlic and reserved flour; cook for 1 minute, stirring constantly.
- Slowly whisk in chicken broth and Worcestershire sauce, scraping up browned bits. Bring to a simmer and let thicken for 2-3 minutes.
- Reduce heat to low. Return pork chops to the skillet. Cover and simmer for 12-15 minutes, flipping once, until pork reaches 145°F internal temperature.
- Stir in heavy cream and thyme. Cook, uncovered, for 2-3 minutes more. Garnish with fresh parsley and serve hot, spooning extra gravy over each chop.
