Description

  • 4 bone-in pork chops (about 1-inch thick)
  • 3 tbsp extra-virgin olive oil
  • 4 cloves garlic, minced
  • Juice of 1 large lemon (plus zest)
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp unsalted butter (optional, for finishing)
  • Lemon wedges, for serving

Instructions

  1. Pat pork chops dry with paper towels. Season both sides with salt, pepper, oregano, and red pepper flakes.
  2. Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3–4 minutes per side, until golden brown and cooked through (internal temp ~145°F). Remove and set aside.
  3. Lower the heat to medium. In the same pan, add a bit more olive oil if needed. Add minced garlic and sauté 30 seconds, until fragrant but not browned.
  4. Stir in lemon juice, zest, and chopped parsley. Let it simmer gently for 1 minute to combine flavors.
  5. Return the pork chops to the pan, spoon sauce over the top, and cook 1 minute to glaze. Optionally swirl in a bit of butter for a silky finish.
  6. Serve hot with extra lemon wedges and a drizzle of pan sauce.
