- 3 tbsp extra-virgin olive oil
- 4 cloves garlic, minced
- Juice of 1 large lemon (plus zest)
- 2 tbsp fresh parsley, finely chopped
- 1 tsp dried oregano
- 1/2 tsp crushed red pepper flakes (optional)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp unsalted butter (optional, for finishing)

Instructions
- Pat pork chops dry with paper towels. Season both sides with salt, pepper, oregano, and red pepper flakes.
- Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3–4 minutes per side, until golden brown and cooked through (internal temp ~145°F). Remove and set aside.
- Lower the heat to medium. In the same pan, add a bit more olive oil if needed. Add minced garlic and sauté 30 seconds, until fragrant but not browned.
- Stir in lemon juice, zest, and chopped parsley. Let it simmer gently for 1 minute to combine flavors.
- Return the pork chops to the pan, spoon sauce over the top, and cook 1 minute to glaze. Optionally swirl in a bit of butter for a silky finish.
- Serve hot with extra lemon wedges and a drizzle of pan sauce.
