- 4 salmon fillets (about 6 oz each)
- 2 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 lemon, sliced and juiced
- 1 teaspoon dried Italian herbs or parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cup asparagus, trimmed
Instructions
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- Arrange salmon fillets in the center of the sheet pan. Place cherry tomatoes and asparagus around the salmon.
- In a small bowl, whisk together melted butter, olive oil, minced garlic, lemon juice, dried herbs, salt, and black pepper.
- Pour the lemon garlic butter mixture evenly over the salmon and vegetables. Garnish salmon with lemon slices.
- Bake for 18-20 minutes or until the salmon flakes easily with a fork and the vegetables are tender. Serve immediately.
