Seared Scallops over Garlic Pasta for a Luxurious Dinner Night


Ingredients

Scale
  • 12 oz Scallops (Choose dry-packed for best flavor.)
  • 1 tbsp Olive Oil (Extra virgin recommended.)
  • to taste Salt
  • to taste Pepper
  • 8 oz Pasta (linguine or spaghetti) (Use your favorite variety.)
  • 2 tbsp Butter (Can substitute with olive oil.)
  • 3 cloves Garlic (Fresh garlic is best.)
  • 2 tbsp Herbs (parsley or basil) (Fresh herbs are ideal.)
  • 1 tbsp Lemon Zest (Brightens the dish.)

Instructions

  1. Pat the scallops dry with a paper towel and season with salt and pepper.
  2. Bring a large pot of salted water to a boil. Cook pasta until al dente, about 8-10 minutes. Reserve half a cup of pasta water, then drain.
  3. In a large skillet, heat olive oil and butter over medium-high heat. Add scallops and sear for 2-3 minutes on each side until golden brown. Remove from skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant. Stir in reserved pasta water and drained pasta.
  5. Toss pasta with garlic sauce and add seared scallops. Serve immediately, garnished with fresh herbs and lemon zest.
