Seared Scallops over Garlic Pasta for a Luxurious Dinner Night
Ingredients

- 12 oz Scallops (Choose dry-packed for best flavor.)
- 1 tbsp Olive Oil (Extra virgin recommended.)
- to taste Salt
- to taste Pepper
- 8 oz Pasta (linguine or spaghetti) (Use your favorite variety.)
- 2 tbsp Butter (Can substitute with olive oil.)
- 3 cloves Garlic (Fresh garlic is best.)
- 2 tbsp Herbs (parsley or basil) (Fresh herbs are ideal.)
- 1 tbsp Lemon Zest (Brightens the dish.)
Instructions
- Pat the scallops dry with a paper towel and season with salt and pepper.
- Bring a large pot of salted water to a boil. Cook pasta until al dente, about 8-10 minutes. Reserve half a cup of pasta water, then drain.
- In a large skillet, heat olive oil and butter over medium-high heat. Add scallops and sear for 2-3 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant. Stir in reserved pasta water and drained pasta.
- Toss pasta with garlic sauce and add seared scallops. Serve immediately, garnished with fresh herbs and lemon zest.
