Description

Experience the delightful flavors of Turnip Cake, a cherished family tradition perfect for gatherings.

Ingredients

Scale
  • 20 ounces Daikon Radish (Grated finely for best texture)
  • 1.25 cups Rice Flour (Avoid substituting with glutinous rice flour)
  • 13 tablespoons Cornstarch (Adjust based on desired moisture)
  • 0.5 teaspoon Salt (Enhances flavor)
  • 0.5 teaspoon Sugar (Feel free to adjust)
  • 0.25 teaspoon White Pepper (Introduces mild spice)
  • 12 cups Water (Modify based on preferred moisture)
  • Neutral Oil (Can use vegetable, canola, or avocado oil)
  • Dried Shrimp (Soak and chop before using)
  • Dried Shiitake Mushrooms (Soak to rehydrate and chop prior to using)
  • Chinese Sausage (For vegetarian option, substitute with shredded tofu)
  • Scallion (Essential for taste and color)

Instructions

  1. In a wok, warm up some neutral oil over medium heat. Add the soaked and chopped dried shrimp, rehydrated mushrooms, and sliced Chinese sausage. Stir-fry for about 5 minutes until fragrant, then mix in the scallions and remove from heat.
  2. Toss in the finely grated daikon radish and 1 cup of water to your wok. Let it simmer gently for about 10 minutes, allowing the flavors to mingle and the radish to soften up.
  3. Take a separate mixing bowl to combine 1 ¼ cups rice flour, 1-3 tablespoons cornstarch, and ½ cup of water. Stir until the mixture is smooth and free of lumps.
  4. Blend the radish mixture with the flour mixture. Season with ½ teaspoon salt, ½ teaspoon sugar, and ¼ teaspoon white pepper. Mix until you get a thick, cohesive batter.
  5. Brush a loaf pan with oil to prevent sticking. Pour in the batter evenly and place the pan in a steamer. Steam for 50 minutes if using a loaf pan or 40 minutes for a round pan, until the cake is set.
  6. Once steamed, let the cake cool for about 30 minutes. Slice the cooled cake with a wet knife, then pan-fry the slices until they are golden brown and crispy on the outside.
