Instructions
- In a wok, warm up some neutral oil over medium heat. Add the soaked and chopped dried shrimp, rehydrated mushrooms, and sliced Chinese sausage. Stir-fry for about 5 minutes until fragrant, then mix in the scallions and remove from heat.
- Toss in the finely grated daikon radish and 1 cup of water to your wok. Let it simmer gently for about 10 minutes, allowing the flavors to mingle and the radish to soften up.
- Take a separate mixing bowl to combine 1 ¼ cups rice flour, 1-3 tablespoons cornstarch, and ½ cup of water. Stir until the mixture is smooth and free of lumps.
- Blend the radish mixture with the flour mixture. Season with ½ teaspoon salt, ½ teaspoon sugar, and ¼ teaspoon white pepper. Mix until you get a thick, cohesive batter.
- Brush a loaf pan with oil to prevent sticking. Pour in the batter evenly and place the pan in a steamer. Steam for 50 minutes if using a loaf pan or 40 minutes for a round pan, until the cake is set.
- Once steamed, let the cake cool for about 30 minutes. Slice the cooled cake with a wet knife, then pan-fry the slices until they are golden brown and crispy on the outside.
