- 1 cup bell peppers (diced; optional to add onions)
- 2 cups spinach (fresh; substitute with kale if preferred)
- 1 teaspoon salt (adjust to taste)
- 1 teaspoon black pepper (or red pepper flakes for heat)
- 1 teaspoon garlic powder (or fresh minced garlic)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly and set it aside for easy cleanup.
- Brown the sausage in a skillet over medium heat until cooked through, breaking it up into small pieces, about 5-7 minutes. Drain excess grease if necessary.
- Whisk together the eggs and milk in a large bowl until well combined and fluffy. Season with salt, black pepper, and garlic powder to taste.
- Combine the bread cubes, cooked sausage, diced bell peppers, and spinach in the egg mixture. Stir everything together until the bread is well coated with the egg.
- Pour the mixture into the prepared baking dish, spreading it evenly. Top with shredded cheese for that melty finish!
- Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown.
