  • 8 large eggs (fresh)
  • 1 cup milk (substitute with dairy-free milk for lactose-free version)
  • 2 cups shredded cheese (Cheddar, Monterey Jack, or pepper jack)
  • 4 cups bread (stale bread or croissants; gluten-free works too)
  • 1 cup bell peppers (diced; optional to add onions)
  • 2 cups spinach (fresh; substitute with kale if preferred)
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon black pepper (or red pepper flakes for heat)
  • 1 teaspoon garlic powder (or fresh minced garlic)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly and set it aside for easy cleanup.
  2. Brown the sausage in a skillet over medium heat until cooked through, breaking it up into small pieces, about 5-7 minutes. Drain excess grease if necessary.
  3. Whisk together the eggs and milk in a large bowl until well combined and fluffy. Season with salt, black pepper, and garlic powder to taste.
  4. Combine the bread cubes, cooked sausage, diced bell peppers, and spinach in the egg mixture. Stir everything together until the bread is well coated with the egg.
