  • 1 tablespoon Vegetable Oil

Instructions

  1. In a mixer, beat softened butter and granulated sugar until fluffy.
  2. Add milk and vanilla extract, then gradually mix in dry ingredients until just combined.
  3. Form dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
  4. Preheat oven to 350°F (175°C). Spread coconut on a baking sheet and toast for 10-15 minutes until golden brown, stirring often.
  5. Roll chilled dough to ⅛-inch thickness on a floured surface. Cut 2-inch circles, then use a smaller cutter for the center hole.
  6. Bake on a baking sheet for 10-12 minutes until lightly golden. Cool completely on a wire rack.
  7. Melt caramels and heavy cream in a saucepan over low heat until smooth. Stir in toasted coconut.
  8. Dip cooled cookies in melted semisweet chocolate, letting excess drip off.
  9. Spoon caramel-coconut mixture onto each dipped cookie and drizzle with more melted chocolate.
