- 8 oz Tortellini (fresh or frozen cheese tortellini)
- 6 oz Salami (can substitute with pepperoni or grilled chicken)
- 2 cups Cherry Tomatoes (halved)
- 8 oz Mozzarella Balls (fresh mozzarella preferred)
- 1/4 cup Extra Virgin Olive Oil (or avocado oil)
- 2 tbsp Balsamic Vinegar (can use apple cider vinegar)
- 1 tsp Dried Oregano (or fresh oregano)
- to taste Salt
- to taste Pepper
Instructions
- Bring a large pot of salted water to a boil. Add the tortellini and cook according to package directions until al dente, usually 3-5 minutes. Drain and set aside to cool slightly.
- While the tortellini is cooking, chop the salami into bite-sized pieces and halve the cherry tomatoes.
- In a large mixing bowl, gently mix the cooked tortellini, chopped salami, halved cherry tomatoes, and mozzarella balls.
- In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, dried oregano, salt, and pepper until well combined.
- Drizzle the dressing over the salad mixture, gently toss to coat everything evenly, cover, and refrigerate for at least 30 minutes.
- Just before serving, give the salad a gentle toss again and present it on a stylish platter.
