Enjoy the vibrant flavors of Salami-Mozzarella Tortellini Salad, perfect for summer gatherings.


Ingredients

  • 8 oz Tortellini (fresh or frozen cheese tortellini)
  • 6 oz Salami (can substitute with pepperoni or grilled chicken)
  • 2 cups Cherry Tomatoes (halved)
  • 8 oz Mozzarella Balls (fresh mozzarella preferred)
  • 1/4 cup Extra Virgin Olive Oil (or avocado oil)
  • 2 tbsp Balsamic Vinegar (can use apple cider vinegar)
  • 1 tsp Dried Oregano (or fresh oregano)
  • to taste Salt
  • to taste Pepper

Instructions

  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package directions until al dente, usually 3-5 minutes. Drain and set aside to cool slightly.
  2. While the tortellini is cooking, chop the salami into bite-sized pieces and halve the cherry tomatoes.
  3. In a large mixing bowl, gently mix the cooked tortellini, chopped salami, halved cherry tomatoes, and mozzarella balls.
  4. In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, dried oregano, salt, and pepper until well combined.
  5. Drizzle the dressing over the salad mixture, gently toss to coat everything evenly, cover, and refrigerate for at least 30 minutes.
  6. Just before serving, give the salad a gentle toss again and present it on a stylish platter.
