Description

A simple and delicious Salami Mozzarella Tortellini Pasta Salad. This recipe features tender cheese tortellini, savory salami, creamy mozzarella, and a zesty homemade Italian dressing. It’s perfect for picnics, potlucks, or a quick meal.


Ingredients

  • 1 (9 ounce) package refrigerated cheese tortellini
  • 1 cup cubed cooked salami
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced black olives
  • 1/4 cup chopped red onion
  • 1/4 cup chopped green bell pepper
  • For the Dressing:
  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the tortellini according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked tortellini, salami, mozzarella cheese, cherry tomatoes, black olives, red onion, and green bell pepper.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper to make the dressing.
  4. Pour the dressing over the tortellini mixture and toss gently to coat.
