- 1 (9 ounce) package refrigerated cheese tortellini
- 1 cup cubed cooked salami
- 1 cup shredded mozzarella cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sliced black olives
- 1/4 cup chopped red onion
- 1/4 cup chopped green bell pepper
- For the Dressing:
- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook the tortellini according to package directions. Drain and rinse with cold water.
- In a large bowl, combine the cooked tortellini, salami, mozzarella cheese, cherry tomatoes, black olives, red onion, and green bell pepper.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper to make the dressing.
- Pour the dressing over the tortellini mixture and toss gently to coat.
