- 8 oz (225g) spaghetti
- 1 pint (2 cups) cherry or grape tomatoes
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1 ball burrata cheese (4 oz / 113g)
- Fresh basil leaves, torn or chopped
- Grated parmesan for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Place cherry tomatoes in a baking dish. Drizzle with olive oil, add minced garlic, red pepper flakes, salt, and pepper. Roast for 20 minutes or until soft and blistered.
- While the tomatoes roast, cook spaghetti according to package directions. Reserve 1/4 cup of pasta water and drain the rest.
- Add drained pasta to the roasted tomato pan or a large bowl. Toss gently with a splash of pasta water to make it glossy.
- Plate the pasta, then gently place a burrata ball on top. Sprinkle with fresh basil and black pepper. Optional: add grated parmesan or a drizzle of olive oil.
