  • 1 teaspoon pure vanilla extract (Can use almond extract for a twist.)
  • 8 ounces cream cheese (Use vegan cream cheese for a dairy-free version.)
  • 1/4 cup unsalted butter (Ensure it is melted.)
  • 2 tablespoons water (Adjust for desired icing consistency.)
  • 3 cups confectioners’ sugar (Adjust as needed for thickness.)
  • 1/4 teaspoon salt (Enhances sweetness.)

Instructions

  1. Preheat your oven to 350°F (180°C) and line three sheet pans with aluminum foil or parchment paper.
  2. Whisk together the flour, baking soda, salt, and cream of tartar in a bowl.
  3. Cream the room-temperature butter in a stand mixer until it’s creamy. Add the granulated sugar next and beat until fluffy.
  4. Incorporate the egg, followed by the cocoa powder, red food coloring, and vanilla extract. Mix until well combined.
  5. Gradually combine the dry mixture into the wet ingredients. Mix until there are no visible streaks of flour.
  6. Shape the dough into 3 oz (85 g) balls and place them on a baking sheet.
  7. Bake one pan at a time, gently banging the pan every 2 minutes, baking for a total of 13-16 minutes.
  8. Cool the cookies on the baking pan for 10 minutes before transferring them to a wire rack.
  9. Prepare the icing by melting the butter, then whisking in cream cheese, water, vanilla, and salt.
  10. Dip the cooled cookies halfway into the icing and decorate with sprinkles.
