Description

Irresistible Red Velvet Brownie Bites with Cream Cheese Swirl


Ingredients

  • 1 cup sugar
  • 1/3 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons red food coloring
  • 1/4 teaspoon salt
  • 1 teaspoon espresso powder
  • 1 teaspoon vinegar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 8 ounces cream cheese
  • 1/4 cup additional sugar
  • 1 large egg yolk

Instructions

  1. Preheat your oven to 350°F and grease a mini muffin pan thoroughly.
  2. Melt butter in a mixing bowl, then combine with sugar, cocoa powder, vanilla, red food coloring, salt, espresso powder, and vinegar.
  3. Whisk in eggs one at a time until fully incorporated. Then, gently fold in flour until just mixed.
  4. Beat cream cheese with additional sugar and vanilla in a separate bowl until smooth. Fold in the egg yolk.
  5. Fill each muffin cup halfway with brownie batter, add a dollop of cream cheese filling, then top with more brownie batter.
  6. Swirl gently with a toothpick to create a marbled effect.
  7. Bake for 12 minutes, or until set but still soft in the center.
  8. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
