Irresistible Red Velvet Brownie Bites with Cream Cheese Swirl

- 1 cup sugar
- 1/3 cup cocoa powder
- 1 teaspoon vanilla extract
- 2 tablespoons red food coloring
- 1/4 teaspoon salt
- 1 teaspoon espresso powder
- 1 teaspoon vinegar
- 2 large eggs
- 1 cup all-purpose flour
- 8 ounces cream cheese
- 1/4 cup additional sugar
- 1 large egg yolk
Instructions
- Preheat your oven to 350°F and grease a mini muffin pan thoroughly.
- Melt butter in a mixing bowl, then combine with sugar, cocoa powder, vanilla, red food coloring, salt, espresso powder, and vinegar.
- Whisk in eggs one at a time until fully incorporated. Then, gently fold in flour until just mixed.
- Beat cream cheese with additional sugar and vanilla in a separate bowl until smooth. Fold in the egg yolk.
- Fill each muffin cup halfway with brownie batter, add a dollop of cream cheese filling, then top with more brownie batter.
- Swirl gently with a toothpick to create a marbled effect.
- Bake for 12 minutes, or until set but still soft in the center.
- Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
