  • 1 (14 ounce) package empanada discs
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chorizo and cook, breaking it up with a spoon, until browned and cooked through. Drain excess grease.
  2. In a bowl, combine the cooked chorizo, Monterey Jack cheese, Oaxaca cheese, cilantro, and black pepper. Mix well. This is your queso fundido chorizo filling.
  3. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
