Description

A creamy and spicy Queso Fundido Chorizo recipe, perfect for dipping tortilla chips or scooping with warm tortillas. This easy chorizo cheese dip is an authentic Mexican appetizer that impresses.


Ingredients

  • 1 pound Mexican chorizo
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chopped fresh cilantro
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra spice)
  • 8 ounces Oaxaca cheese, shredded
  • 8 ounces Chihuahua cheese, shredded
  • 1/4 cup heavy cream
  • Salt, to taste
  • Tortilla chips, for serving
  • Warm tortillas, for serving

Instructions

  1. Cook the chorizo in a large oven-safe skillet over medium heat. Break it up with a spoon and cook until browned and cooked through. Drain off most of the grease, leaving about 1 tablespoon in the skillet.
  2. Add the chopped onion to the skillet with the chorizo and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, cilantro, cumin, chili powder, smoked paprika, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
  4. Add the shredded Oaxaca and Chihuahua cheeses to the skillet. Stir gently until the cheeses begin to melt.
  5. Pour in the heavy cream and stir until the cheese is smooth and creamy. This creates your chorizo cheese dip.
  6. Season with salt to taste.
  7. Place the skillet under a broiler for 1-2 minutes, or until the top is lightly golden and bubbly. Watch closely to prevent burning.
  8. Serve your chorizo queso fundido immediately with tortilla chips and warm tortillas.

Notes

  • You can use a blend of your favorite melting cheeses if Oaxaca and Chihuahua are unavailable.
  • Adjust the cayenne pepper to control the spice level of your chorizo queso fundido.
  • For a smoother dip, you can stir in a little more heavy cream.
