Description

Pistachio Raspberry Cheesecake Domes offer a delightful fusion of creamy cheesecake, crunchy pistachio crust, and vibrant raspberry swirl. These no-bake mini cheesecakes are visually striking and perfect for any special occasion.


Ingredients

  • 1 cup pistachios, shelled
  • 1/2 cup crushed digestive biscuits or graham crackers
  • 2 tbsp melted butter
  • 2 cups cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup raspberry puree
  • 1/2 cup fresh raspberries
  • 1 tbsp chopped pistachios (for garnish)
  • Fresh mint leaves (optional)

Instructions

  1. Prepare the base: In a food processor, pulse pistachios and digestive biscuits until finely ground. Add melted butter and mix until well combined.
  2. Divide the pistachio mixture evenly into small dome molds or cupcake molds. Press firmly to form the base. Refrigerate to set.
  3. Prepare the cheesecake filling: In a mixing bowl, whisk cream cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
  4. Spoon the cheesecake mixture into the molds on top of the pistachio base. Smooth the top.
  5. Add a dollop of raspberry puree to the center of each dome and swirl gently with a toothpick for a marbled effect.
  6. Freeze the domes for at least 4 hours or until completely set.
  7. Carefully remove the Pistachio Raspberry Cheesecake Domes from the molds.
  8. Garnish with fresh raspberries, chopped pistachios, and mint leaves.
