  • 1 pound smoked kielbasa, sliced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (10 ounce) can diced tomatoes, undrained
  • 1 pound frozen pierogi
  • 1/2 cup heavy cream
  • 1/4 cup fresh dill, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add sliced kielbasa and cook until browned, about 5-7 minutes. Remove kielbasa from the pot and set aside, leaving the drippings.
  2. Add chopped yellow onion to the pot and cook until softened, about 3-5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Pour in chicken broth and diced tomatoes. Bring the mixture to a simmer.
  4. Add frozen pierogi to the simmering broth. Cook according to package directions, usually 5-8 minutes, until the pierogi float to the top and are tender.
  5. Return the cooked kielbasa to the pot. Stir in heavy cream and fresh chopped dill. Season the creamy pierogi dill soup with salt and black pepper to taste.
  6. Serve the hearty pierogi dill soup warm, garnished with extra fresh dill if desired.
