Description

Golden and crispy on the outside, tender on the inside, these perfectly roasted Yukon Gold potatoes are a simple and delicious side dish for any occasion.

  • 2 pounds Yukon Gold potatoes, washed and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the cubed Yukon Gold potatoes with olive oil, salt, pepper, garlic powder, rosemary, and smoked paprika until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet, ensuring they are not crowded for maximum crispiness.
  4. Roast in the preheated oven for 30–35 minutes, flipping the potatoes halfway through, until golden brown and crispy on the edges.
  5. Remove from the oven, transfer to a serving dish, and garnish with fresh parsley before serving.
