Instructions
- Bring a large pot of salted water to a boil. Add fettuccine or linguine, cooking until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water before draining.
- In a blender, mix the cottage cheese, milk, and Parmesan until smooth to create a creamy sauce.
- In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Pour the blended mixture into the skillet with garlic. Stir in salt, pepper, and nutmeg. Warm gently for 2-3 minutes, allowing flavors to meld.
- Add drained pasta to the skillet, tossing it with the sauce. Use reserved pasta water to adjust consistency if needed.
- Plate the creamy Pasta Alfredo Cottage Cheese immediately and garnish with chopped parsley and additional Parmesan.
