  • 1/2 cup grated Parmesan cheese (adds a rich flavor)
  • 2 tbsp unsalted butter (for sautéing garlic)
  • 2 cloves garlic, minced (adds aromatic flavor)
  • 1/4 tsp freshly ground black pepper (adds a kick)
  • 1/4 tsp salt (essential for flavor)
  • pinch freshly grated nutmeg (optional, for warmth)
  • 2 tbsp chopped fresh parsley (for color)
  • extra grated Parmesan cheese (for serving)

Instructions

  1. Bring a large pot of salted water to a boil. Add fettuccine or linguine, cooking until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water before draining.
  2. In a blender, mix the cottage cheese, milk, and Parmesan until smooth to create a creamy sauce.
  3. In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Pour the blended mixture into the skillet with garlic. Stir in salt, pepper, and nutmeg. Warm gently for 2-3 minutes, allowing flavors to meld.
  5. Add drained pasta to the skillet, tossing it with the sauce. Use reserved pasta water to adjust consistency if needed.
  6. Plate the creamy Pasta Alfredo Cottage Cheese immediately and garnish with chopped parsley and additional Parmesan.
