- 1.5 lbs Boneless Skinless Chicken
- 1 tbsp Olive Oil
- 0.5 tsp Salt
- 0.25 tsp Pepper
- 10 oz Penne Pasta
- 1 cup Sun-Dried Tomatoes
- 3 tbsp Butter
- 2 cups Chicken Broth
- 1 cup Heavy Cream
- 1 cup Parmesan Cheese
- 3 tbsp Flour
- 2 tsp Dried Italian Seasoning
- 2 tsp Minced Garlic
- 1 tsp Paprika
- Fresh Basil
Instructions
- Bring a pot of salted water to a boil and add the penne pasta. Cook until al dente, usually around 10-12 minutes. Drain and set aside.
- Cut the boneless skinless chicken into 1-inch pieces. Season generously with salt and pepper. In a large skillet, heat olive oil over medium-high heat and cook the chicken for about 6–8 minutes, stirring occasionally, until cooked through and golden brown. Remove from the skillet and set aside.
- In the same skillet, add butter to melt. Once melted, sauté minced garlic until fragrant, about 1 minute. Sprinkle flour over the mixture, stirring to form a paste. Gradually whisk in chicken broth, followed by heavy cream and Parmesan cheese, stirring until the sauce is smooth and creamy.
- Incorporate the drained sun-dried tomatoes, dried Italian seasoning, and paprika. Allow the sauce to simmer gently, stirring occasionally, until it thickens slightly, about 5-7 minutes.
- Add the cooked chicken and drained penne pasta to the sauce. Stir gently to coat everything evenly. Taste and adjust salt and pepper if necessary.
- Serve your dish with fresh basil torn on top and sprinkle additional Parmesan cheese if desired, then enjoy your meal!
