Ingredients

  • 1.5 lbs Boneless Skinless Chicken
  • 1 tbsp Olive Oil
  • 0.5 tsp Salt
  • 0.25 tsp Pepper
  • 10 oz Penne Pasta
  • 1 cup Sun-Dried Tomatoes
  • 3 tbsp Butter
  • 2 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese
  • 3 tbsp Flour
  • 2 tsp Dried Italian Seasoning
  • 2 tsp Minced Garlic
  • 1 tsp Paprika
  • Fresh Basil

Instructions

  1. Bring a pot of salted water to a boil and add the penne pasta. Cook until al dente, usually around 10-12 minutes. Drain and set aside.
  2. Cut the boneless skinless chicken into 1-inch pieces. Season generously with salt and pepper. In a large skillet, heat olive oil over medium-high heat and cook the chicken for about 6–8 minutes, stirring occasionally, until cooked through and golden brown. Remove from the skillet and set aside.
  3. In the same skillet, add butter to melt. Once melted, sauté minced garlic until fragrant, about 1 minute. Sprinkle flour over the mixture, stirring to form a paste. Gradually whisk in chicken broth, followed by heavy cream and Parmesan cheese, stirring until the sauce is smooth and creamy.
  4. Incorporate the drained sun-dried tomatoes, dried Italian seasoning, and paprika. Allow the sauce to simmer gently, stirring occasionally, until it thickens slightly, about 5-7 minutes.
  5. Add the cooked chicken and drained penne pasta to the sauce. Stir gently to coat everything evenly. Taste and adjust salt and pepper if necessary.
  6. Serve your dish with fresh basil torn on top and sprinkle additional Parmesan cheese if desired, then enjoy your meal!
