- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup chopped yellow onion
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and freshly ground black pepper to taste
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 tablespoons unsalted butter, melted
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more until fragrant.
- Return chicken to the pot. Pour in chicken broth and add thyme and rosemary. Bring to a boil, then reduce heat and simmer for 15 minutes. Season with salt and pepper.
- In a medium bowl, whisk together flour, baking powder, and salt. Stir in milk and melted butter until just combined. Do not overmix.
- Drop spoonfuls of the dumpling batter onto the simmering soup. Cover the pot and cook for 15-20 minutes, or until dumplings are cooked through and fluffy.
