Ingredients

  • 2 cups chopped bell peppers (mixed colors)
  • 1 large zucchini, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted
  • 3 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup crumbled feta cheese (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, combine bell peppers, zucchini, onion, tomatoes, and olives.
  3. Add olive oil, oregano, garlic powder, salt, and pepper. Toss to coat.
  4. Spread mixture on a baking sheet in a single layer.
  5. Roast for 25-30 minutes until tender and caramelized.
  6. Remove from oven, stir gently, and serve hot, topping with feta if desired.
