Description

  • 2 tablespoons olive oil

  • 1 ounce ranch dressing mix
  • 1 pound smoked sausage, sliced into 1/2-inch pieces
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)
  • 1/4 cup sour cream (optional, for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the quartered potatoes, olive oil, salt, pepper, garlic powder, and ranch dressing mix. Toss until the potatoes are evenly coated.
  3. Spread the seasoned potatoes onto a greased baking sheet in an even layer. Bake for 20 minutes, stirring halfway through.
  4. Add the sliced sausage to the potatoes on the baking sheet. Stir to combine.
  5. Return the baking sheet to the oven and bake for an additional 15 minutes, or until the potatoes are tender and the sausage is heated through.
  6. Remove the baking sheet from the oven and sprinkle shredded cheddar cheese over the top.
  7. Place back in the oven for 3-5 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven. If desired, sprinkle with chopped fresh parsley. Serve warm with a dollop of sour cream if you like.
