Description

A quick and satisfying one-pan meal featuring tender chicken, fluffy rice, fresh broccoli, and plenty of gooey melted cheese. Perfect for busy weeknights and family dinners.


Ingredients

  • 2 medium boneless, skinless chicken breasts (about 1 pound), cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 2 cups broccoli florets
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook for 4-5 minutes until lightly browned.
  2. Add diced onion and minced garlic to the skillet. Cook for 2-3 minutes until the onion becomes translucent.
  3. Stir in the white rice, salt, and black pepper. Pour in the chicken broth and bring to a simmer.
  4. Cover the skillet and reduce heat to low. Allow the rice and chicken to cook for about 15 minutes.
  5. Add broccoli florets, stir gently, and cover again. Continue cooking for an additional 5 minutes until the rice is tender and the broccoli is bright green.
  6. Sprinkle shredded cheddar cheese evenly over the mixture. Cover and let stand for 2-3 minutes until the cheese has melted. Serve hot.
