Ingredients

  • 1 pie crust Premade Pie Crust (Using store-bought saves time.)
  • 1 cup Whole Milk Ricotta Cheese (Strained to remove excess moisture.)
  • 1 cup Mascarpone Cheese (Adds luxurious richness.)
  • ½ cup Powdered Sugar (Adjust to taste.)
  • 1 teaspoon Vanilla Extract (Enhances flavor.)
  • ½ cup Mini Chocolate Chips (Can swap for different types.)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the premade pie crust on a lightly floured surface, and cut out 12 rounds using a 2½-inch cutter.
  3. Press the rounds into a greased mini muffin tin and bake for 10-12 minutes until golden brown, then cool for about 15 minutes.
  4. Mix together the strained ricotta, mascarpone, powdered sugar, vanilla extract, and mini chocolate chips until smooth.
  5. Transfer the filling to a piping bag and fill each cooled crust, garnishing with additional chocolate chips and powdered sugar.
