- 1 cup Whole Milk Ricotta Cheese (Strained to remove excess moisture.)
- 1 cup Mascarpone Cheese (Adds luxurious richness.)
- ½ cup Powdered Sugar (Adjust to taste.)
- 1 teaspoon Vanilla Extract (Enhances flavor.)
- ½ cup Mini Chocolate Chips (Can swap for different types.)
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the premade pie crust on a lightly floured surface, and cut out 12 rounds using a 2½-inch cutter.
- Press the rounds into a greased mini muffin tin and bake for 10-12 minutes until golden brown, then cool for about 15 minutes.
- Mix together the strained ricotta, mascarpone, powdered sugar, vanilla extract, and mini chocolate chips until smooth.
- Transfer the filling to a piping bag and fill each cooled crust, garnishing with additional chocolate chips and powdered sugar.
