Instructions
- Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish.
- In a large bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
- Distribute the meat mixture evenly across the bottom of the prepared dish.
- Bake uncovered for 20–25 minutes.
- While the meatloaf bakes, warm mashed potatoes in a bowl and mix in sour cream and butter until creamy. Season to taste.
- Spread the creamy mashed potatoes evenly over the cooked meatloaf.
- Top the mashed potatoes with shredded cheddar cheese.
- Bake for an additional 10–15 minutes, until the cheese is melted and bubbly.
- Let the casserole cool for 5–10 minutes before slicing. Garnish with parsley if desired.
