Description

  • 3 cups Mashed Potatoes
  • 1/4 cup Sour Cream
  • 2 tbsp Butter
  • 1 1/2 cups Shredded Cheddar Cheese

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
  3. Distribute the meat mixture evenly across the bottom of the prepared dish.
  4. Bake uncovered for 20–25 minutes.
  5. While the meatloaf bakes, warm mashed potatoes in a bowl and mix in sour cream and butter until creamy. Season to taste.
  6. Spread the creamy mashed potatoes evenly over the cooked meatloaf.
  7. Top the mashed potatoes with shredded cheddar cheese.
  8. Bake for an additional 10–15 minutes, until the cheese is melted and bubbly.
  9. Let the casserole cool for 5–10 minutes before slicing. Garnish with parsley if desired.
