- 3 cloves Garlic (Minced)
- 1/2 cup Sun-Dried Tomatoes
- 1 cup Heavy Cream
- 1 cup Freshly Grated Parmesan Cheese
- 1 cup Chicken Broth
- 1 tsp Red Pepper Flakes
- 1 tsp Dried Oregano
- to taste Salt
- to taste Pepper
- to taste Fresh Basil or Parsley
Instructions
- Boil pasta in salted water until al dente; reserve ½ cup pasta water, then drain and set aside the pasta.
- Toss diced chicken with cornstarch, salt, pepper, and oregano to enhance flavor and achieve crispiness.
- Heat seasoned oil in a skillet over medium-high heat and cook chicken until golden for about 5-6 minutes; remove and set aside.
- Melt butter in the skillet, add minced garlic and chopped sun-dried tomatoes; cook for 2-3 minutes until fragrant.
- Stir in chicken broth and heavy cream; bring to a gentle simmer for about 3-5 minutes, then add Parmesan cheese and stir until melted.
- Return chicken to the skillet and simmer in sauce for 5 minutes to soak up flavors.
- Add cooked pasta to the skillet, tossing to combine; use reserved pasta water if the sauce is too thick.
- Garnish with basil or parsley and extra Parmesan before serving.
