Ingredients

  • 1 lb Boneless Skinless Chicken Breasts
  • 2 tbsp Cornstarch
  • 10 oz Pasta (Penne, Rigatoni, or Fettuccine)
  • 2 tbsp Seasoned Oil from Sun-Dried Tomatoes
  • 2 tbsp Butter
  • 3 cloves Garlic (Minced)
  • 1/2 cup Sun-Dried Tomatoes
  • 1 cup Heavy Cream
  • 1 cup Freshly Grated Parmesan Cheese
  • 1 cup Chicken Broth
  • 1 tsp Red Pepper Flakes
  • 1 tsp Dried Oregano
  • to taste Salt
  • to taste Pepper
  • to taste Fresh Basil or Parsley

Instructions

  1. Boil pasta in salted water until al dente; reserve ½ cup pasta water, then drain and set aside the pasta.
  2. Toss diced chicken with cornstarch, salt, pepper, and oregano to enhance flavor and achieve crispiness.
  3. Heat seasoned oil in a skillet over medium-high heat and cook chicken until golden for about 5-6 minutes; remove and set aside.
  4. Melt butter in the skillet, add minced garlic and chopped sun-dried tomatoes; cook for 2-3 minutes until fragrant.
  5. Stir in chicken broth and heavy cream; bring to a gentle simmer for about 3-5 minutes, then add Parmesan cheese and stir until melted.
  6. Return chicken to the skillet and simmer in sauce for 5 minutes to soak up flavors.
  7. Add cooked pasta to the skillet, tossing to combine; use reserved pasta water if the sauce is too thick.
  8. Garnish with basil or parsley and extra Parmesan before serving.
